Ingredients:

20 jumbo pasta shells
Salt, for boiling water
For the Beef Filling:
1 lb ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
1 cup marinara sauce (store-bought or homemade)
For the Ricotta Mixture:
1 ½ cups ricotta cheese
1 egg
½ cup grated Parmesan cheese
1 ½ cups shredded mozzarella cheese, divided
2 tbsp chopped fresh parsley (or 1 tbsp dried)
½ tsp garlic powder
Salt and pepper, to taste
For the Topping:
2 cups marinara sauce
½ cup shredded mozzarella cheese
Fresh basil or parsley, for garnish
Instructions:
- Cook the Shells:
Bring a large pot of salted water to a boil. Add the jumbo shells and cook until just al dente (about 8–9 minutes). Drain and rinse under cold water to stop the cooking. Set aside on a baking sheet, lightly coated with olive oil or cooking spray to prevent sticking. - Make the Beef Filling:
In a skillet over medium heat, sauté the diced onion in a little olive oil until soft, about 3–4 minutes. Add the garlic and cook for another 30 seconds until fragrant. Add the ground beef, breaking it up with a spoon, and cook until browned. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using).
