Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1 packet (0.7 oz) Italian dressing seasoning mix
1 cup chicken broth
1 block (8 oz) cream cheese, softened
1 can (10.5 oz) cream of chicken soup
½ cup grated Parmesan cheese
½ tsp dried thyme
½ tsp onion powder
ÂĽ tsp crushed red pepper flakes (optional)
For Serving:
2 cups long grain white rice, cooked according to package instructions
Fresh parsley, chopped (for garnish)
Extra Parmesan, for topping
Instructions:
Step 1: Season & Sear the Chicken
Pat chicken breasts dry and season both sides with salt and black pepper. In a large skillet or sauté pan, heat olive oil and butter over medium-high heat. Add the chicken breasts and sear for 3–4 minutes per side until golden brown. Remove from pan and set aside (they don’t need to be fully cooked yet).
Step 2: Build the Flavor Base
In the same skillet, lower heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Then sprinkle in the Italian dressing mix, onion powder, thyme, and (optional) red pepper flakes. Stir briefly to bloom the spices.
Step 3: Make the Creamy Sauce
Reduce heat to low and stir in the chicken broth, cream of chicken soup, cream cheese, and Parmesan. Whisk until smooth and fully combined. Let the sauce simmer gently for 3–5 minutes, stirring often, until thick and creamy.
Step 4: Simmer the Chicken
Return the seared chicken breasts to the pan, nestling them into the sauce. Spoon some sauce over the tops. Cover and simmer on low heat for 20–25 minutes, or until the chicken is cooked through and tender.
Step 5: Prepare the Rice
While the chicken simmers, cook your rice according to package directions. Fluff it with a fork once done.
Step 6: Serve & Enjoy
Spoon a generous portion of rice onto each plate. Place a chicken breast on top, then ladle over plenty of that rich, creamy sauce. Garnish with chopped parsley and extra Parmesan if desired.
