Instructions:

Make the Apple Pie Filling:
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced apples, brown sugar, granulated sugar, cinnamon, nutmeg, vanilla, and flour. Stir everything together and cook for about 8–10 minutes, or until the apples are tender and the sauce is thick and glossy. Remove from heat and let cool slightly.

Assemble the Enchiladas:
Lay out the flour tortillas on a clean surface. Spoon about ½ cup of the apple pie filling onto the center of each tortilla. Roll them up tightly like a burrito and place them seam-side down in a greased 9×13-inch baking dish.

Make the Syrup:
In a medium saucepan over medium heat, melt ½ cup butter. Stir in the brown sugar, granulated sugar, cinnamon, and water. Bring to a gentle boil and let simmer for 3–4 minutes, stirring constantly, until it thickens slightly. Remove from heat and stir in the vanilla.

Pour and Bake:
Pour the warm syrup evenly over the rolled enchiladas in the baking dish. Let them sit for about 10–15 minutes to soak up some of the sauce (this helps them get extra gooey and flavorful!).

Preheat your oven to 350°F (175°C). Bake the enchiladas uncovered for 25–30 minutes, or until they’re bubbly and golden brown.

Cool and Serve:
Let the enchiladas cool slightly before serving. Top with a scoop of vanilla ice cream, a drizzle of caramel sauce, a dollop of whipped cream, or a sprinkle of chopped nuts for the ultimate apple pie experience.
