Golden, crispy on the outside and filled with luscious creamy cheesecake and sweet cherry pie filling on the inside—these Cherry Cheesecake Chimichangas are a decadent dessert dream come true! Perfect for impressing guests or treating yourself to something unforgettable.
Ingredients:
For the Filling:
8 oz cream cheese, softened
ÂĽ cup sour cream
â…“ cup powdered sugar
1 tsp vanilla extract
1 cup cherry pie filling
For the Chimichangas:
6 (8-inch) flour tortillas
2 tbsp butter, melted
ÂĽ cup granulated sugar
1 tsp ground cinnamon
Toothpicks (for securing)
For Frying:
Vegetable oil (for shallow frying)
Optional Toppings:
Extra cherry pie filling
Whipped cream
Powdered sugar dusting
White chocolate drizzle
Instructions:
- Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. Add the sour cream, powdered sugar, and vanilla extract. Beat again until fully combined and creamy. This will be the rich, tangy base of your chimichangas. - Assemble the Chimichangas:
Lay one tortilla flat on a clean surface. Spoon about 2 tablespoons of cheesecake filling down the center. Top with 1–2 tablespoons of cherry pie filling. Fold in the sides and roll the tortilla tightly into a burrito shape. Secure the seam with a toothpick. Repeat with the remaining tortillas and filling. - Fry to Golden Perfection:
In a deep skillet or saucepan, heat about 1 inch of vegetable oil over medium heat. Once hot (about 350°F/175°C), carefully place 1–2 chimichangas seam-side down into the oil. Fry for 1–2 minutes per side, or until golden brown and crispy. Remove with tongs and place on a paper towel-lined plate to drain excess oil. - Coat in Cinnamon Sugar:
While still warm, brush each chimichanga lightly with melted butter, then roll in the cinnamon-sugar mixture (combine the granulated sugar and cinnamon in a shallow dish). The buttery coating helps the sugar stick and adds extra richness. - Garnish and Serve:
Serve warm or slightly cooled. For a beautiful presentation, drizzle with white chocolate, add a dollop of whipped cream, or spoon extra cherry pie filling on top. Dust with powdered sugar for an elegant touch.
