Ingredients:
For the Chicken:
2 large boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1 cup seasoned breadcrumbs
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
2 eggs, beaten
Oil, for frying
For the Sliders:
12 slider buns or Hawaiian rolls
1½ cups marinara sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
2 tbsp fresh basil, chopped (optional)
For the Garlic Butter Topping:
4 tbsp unsalted butter, melted
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
½ tsp onion powder
1 tbsp grated Parmesan
Instructions:
- Prepare the Chicken:
Slice the chicken breasts horizontally to create thinner cutlets, then cut into 12 small pieces to match the size of your slider buns. Place in a bowl with buttermilk, cover, and marinate in the fridge for 30 minutes (up to overnight for extra tenderness). - Bread the Chicken:
Set up three bowls: one with flour, one with beaten eggs, and one with the breadcrumb mixture (breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper). Dredge each piece of chicken in flour, then egg, then breadcrumb mixture, pressing gently to coat. - Fry Until Crispy:
Heat about 1 inch of oil in a skillet over medium-high heat. Fry the breaded chicken pieces for 3–4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel–lined plate. - Assemble the Sliders:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish. Slice the slider buns in half horizontally, keeping the tops together as one piece. Place the bottom halves in the baking dish.
Spread a spoonful of marinara sauce on each bun base. Top with a piece of crispy chicken, more marinara, a sprinkle of shredded mozzarella, and grated Parmesan. Place the top halves of the buns over the chicken.
- Make the Garlic Butter:
In a small bowl, combine melted butter, minced garlic, chopped parsley, onion powder, and Parmesan. Brush generously over the tops of the buns. - Bake to Perfection:
Cover loosely with foil and bake for 15 minutes. Remove foil and bake an additional 5–8 minutes, or until the cheese is melted and the tops are golden and slightly crisp. - Serve and Enjoy:
Remove from the oven and let rest for 5 minutes. Garnish with fresh basil (optional), slice, and serve hot!
