1 cup frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme (or ½ tsp dried)

1 teaspoon fresh rosemary, chopped

1 bay leaf

1 cup Guinness stout beer

1 cup beef broth

1 tablespoon all-purpose flour

Salt and black pepper, to taste

For the Mashed Potato Topping:

2 lbs russet potatoes, peeled and cubed

½ cup unsalted butter

¾ cup whole milk (warm)

Salt, to taste

¼ teaspoon garlic powder (optional)

1 egg yolk (for added richness)

½ cup shredded white cheddar (optional but amazing)

Instructions:

Prepare the Potatoes:

Place the peeled and cubed potatoes into a large pot. Cover with cold water and add a generous pinch of salt.

Bring to a boil and cook until tender, about 15–20 minutes. Drain and return the potatoes to the pot.

Mash with butter, warm milk, garlic powder (if using), and salt until smooth. Stir in the egg yolk and shredded cheese for a richer, creamier texture. Set aside.

Make the Filling:

In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
