
Pineapple Quick Bread 🍍

Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 tsp baking soda
½ tsp salt
2 eggs
½ cup vegetable oil
1 tsp vanilla extract
1 can (20 oz) crushed pineapple, undrained
½ cup chopped walnuts or pecans (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
Mix the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Combine the Wet Ingredients:
In another bowl, beat the eggs, then mix in the oil, vanilla extract, and the entire can of crushed pineapple with juice.
Make the Batter:
Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the chopped nuts if using.
Bake:
Pour the batter into the prepared loaf pan and spread evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy the tropical sweetness in every bite!
