Ingredients:
For the Sausage, Peppers & Onions:
6 Italian sausages (mild or hot, your choice)
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 medium onions, sliced
3 cloves garlic, minced
½ tsp red pepper flakes (optional for heat)
1 tsp dried oregano
1 tsp dried basil
½ tsp fennel seeds (optional for authentic flavor)
¼ cup tomato paste
½ cup chicken broth (or dry white wine)
Salt and black pepper to taste
Fresh chopped parsley, for garnish
For the Garlic Mashed Potatoes:
2½ lbs Yukon Gold potatoes, peeled and cubed
4 cloves garlic, peeled
½ cup unsalted butter
¾ cup whole milk (warm)
¼ cup sour cream (optional for extra creaminess)

Instructions:
Step 1: Cook the Sausages
In a large skillet or cast iron pan, heat 1 tbsp of olive oil over medium heat. Add the Italian sausages and brown them on all sides, about 6–8 minutes total. They don’t need to be fully cooked at this point—just golden. Remove from the pan and set aside.
Step 2: Sauté the Peppers and Onions
In the same pan, add the remaining 1 tbsp olive oil. Toss in the sliced onions and cook for 3–4 minutes until they begin to soften. Add the sliced bell peppers and cook another 6–8 minutes until everything is tender and slightly caramelized. Stir occasionally to avoid burning.
Step 3: Add Garlic and Seasonings
