
Shrimp Linguine 🍤🍝
A restaurant-worthy dish made right at home! This Shrimp Linguine is a flavorful and comforting seafood pasta tossed in a garlicky, buttery white wine sauce with tender shrimp and a touch of heat. Perfect for date night, family dinner, or when you’re craving a little indulgence.
Ingredients:
For the Pasta:
12 oz linguine
Salt, for boiling water
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
2 tbsp unsalted butter
4 cloves garlic, minced
½ tsp red pepper flakes (adjust to taste)
Salt and freshly ground black pepper, to taste
Juice of ½ lemon
For the Sauce:
2 tbsp olive oil
2 tbsp unsalted butter
1 small shallot, finely chopped
3 cloves garlic, minced
½ cup dry white wine (such as Sauvignon Blanc)
¾ cup heavy cream
½ cup freshly grated Parmesan cheese
Zest of 1 lemon
2 tbsp chopped fresh parsley
Salt and pepper, to taste
Optional Garnish:
More Parmesan, for serving
Extra lemon wedges
Chopped fresh basil or parsley
Instructions:
- Cook the Linguine:
Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve ½ cup of the pasta water, then drain the pasta and set aside. - Sauté the Shrimp:
In a large skillet, heat the olive oil and butter over medium-high heat. Add the shrimp in a single layer, season with salt, pepper, and red pepper flakes. Cook for 1–2 minutes per side, or until pink and opaque. Add lemon juice and toss to coat. Remove shrimp from skillet and set aside. - Make the Sauce:
In the same skillet, reduce heat to medium. Add olive oil and butter. Once melted, add the shallots and cook until soft, about 2 minutes. Stir in garlic and cook for another minute until fragrant. Pour in the white wine, scraping the bottom of the skillet to deglaze. Simmer for 2–3 minutes until the wine has reduced slightly. - Add Cream and Cheese:
Stir in the heavy cream and bring to a low simmer. Add the Parmesan cheese and stir until melted and the sauce is smooth. Add lemon zest, and season with salt and pepper to taste. - Toss Everything Together:
Add the cooked linguine and shrimp back to the skillet. Toss everything together to coat the pasta in the creamy sauce. If needed, loosen with a splash of the reserved pasta water. Cook for another 1–2 minutes until heated through. - Garnish and Serve:
Remove from heat. Sprinkle with chopped parsley and more Parmesan if desired. Serve immediately with lemon wedges on the side.
