Ingredients:

1 lb ground beef or ground sausage (or a mix)

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

2 ribs celery, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1 cup chopped okra (fresh or frozen)

1 (15 oz) can diced tomatoes, undrained

1 (15 oz) can red kidney beans, drained and rinsed

1 (15 oz) can sweet corn, drained

2 cups beef broth

1 tsp Cajun seasoning (or more to taste)

½ tsp smoked paprika

¼ tsp cayenne pepper (optional for heat)

Salt and black pepper, to taste

2 cups cooked rice (for serving)

Fresh parsley or green onions, chopped (for garnish)

Instructions:

  1. Brown the Meat:
    In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or sausage and cook until browned and cooked through, about 6-8 minutes. Use a spoon to break up the meat into crumbles. Drain any excess fat and set aside.
  2. Sauté the Aromatics:
    In the same pot, add the diced onion, garlic, celery, and both bell peppers. Cook over medium heat until the vegetables are soft and fragrant, about 5-7 minutes. Stir often to avoid burning the garlic.
  3. Build the Base:
    Return the cooked meat to the pot and stir in the diced tomatoes (with their juices), okra, beans, corn, and beef broth. Stir everything together to combine well.
  4. Spice It Up:
    Add the Cajun seasoning, smoked paprika, cayenne (if using), and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 20–25 minutes, stirring occasionally. This helps the flavors develop and the stew to thicken.
