Ingredients:
1 lb ground beef or ground sausage (or a mix)
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
2 ribs celery, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup chopped okra (fresh or frozen)
1 (15 oz) can diced tomatoes, undrained
1 (15 oz) can red kidney beans, drained and rinsed
1 (15 oz) can sweet corn, drained
2 cups beef broth
1 tsp Cajun seasoning (or more to taste)
½ tsp smoked paprika
¼ tsp cayenne pepper (optional for heat)
Salt and black pepper, to taste
2 cups cooked rice (for serving)
Fresh parsley or green onions, chopped (for garnish)
Instructions:
- Brown the Meat:
In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or sausage and cook until browned and cooked through, about 6-8 minutes. Use a spoon to break up the meat into crumbles. Drain any excess fat and set aside. - Sauté the Aromatics:
In the same pot, add the diced onion, garlic, celery, and both bell peppers. Cook over medium heat until the vegetables are soft and fragrant, about 5-7 minutes. Stir often to avoid burning the garlic. - Build the Base:
Return the cooked meat to the pot and stir in the diced tomatoes (with their juices), okra, beans, corn, and beef broth. Stir everything together to combine well. - Spice It Up:
Add the Cajun seasoning, smoked paprika, cayenne (if using), and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 20–25 minutes, stirring occasionally. This helps the flavors develop and the stew to thicken. - Simmer and Taste:
Let the stew bubble gently until the veggies are tender and the broth has reduced into a hearty, slightly thickened consistency. Taste and adjust seasonings as needed—add more Cajun seasoning for a bolder kick! - Serve It Right:
Ladle the hot swamp stew over a scoop of cooked rice in a bowl. Garnish with fresh parsley or chopped green onions for a pop of color and freshness. - Optional Toppings:
Top it with shredded cheese, a dollop of sour cream, or even a splash of hot sauce if you’re feeling wild!
