Soft, chewy, and unbelievably easy—these Three-Ingredient Vegan Cookies are perfect for a healthy treat or a quick sweet fix. Gluten-free, dairy-free, and no refined sugar—just pure, plant-based goodness!

Ingredients:

  • 2 ripe bananas (medium to large, very spotty is best)
  • 1 cup rolled oats (gluten-free if needed)
  • ½ cup vegan chocolate chips (or raisins, chopped nuts, or dried cranberries for variation)

Optional Add-ins (choose your fave!):

  • 1 tsp cinnamon or pumpkin spice
  • 1 tsp vanilla extract
  • 2 tbsp peanut butter or almond butter
  • A pinch of sea salt

Instructions:

1. Preheat & Prep:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Lightly grease if needed to prevent sticking.

2. Mash the Bananas:
In a medium-sized mixing bowl, mash the ripe bananas with a fork until mostly smooth. Some small lumps are fine—they add texture!

3. Stir in the Oats:
Add the rolled oats to the mashed banana and stir well to combine. The mixture should be thick and sticky. If it’s too wet, add a few more tablespoons of oats.

4. Add Chocolate Chips & Extras:
Fold in the vegan chocolate chips and any optional add-ins you’re using, like a spoonful of peanut butter for richness or a sprinkle of cinnamon for warmth.

5. Scoop & Shape:
Using a spoon or small cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheet. Flatten them slightly with the back of the spoon, shaping into rounds (they won’t spread much while baking).

6. Bake:
Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden and the cookies feel set. The center may still be soft but will firm up as they cool.

7. Cool & Enjoy:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. They’re best enjoyed the same day but can be stored in an airtight container at room temperature for up to 3 days.

8. Serve:
Perfect with a hot cup of tea, coffee, or even a glass of oat milk. These cookies make a great breakfast on-the-go, lunchbox treat, or guilt-free dessert.
